    Bok Choy is one of my favorite vegetables. To me it tastes like a mild celery. I use it in preparing stir fry, soups, and love the taste!

Here is how I dehydrate Bok Choy

cut it up in small pieces.
Blanch it for 5-7 minutes

Then put it in the dehydrator until it is completely dry.

When ready to use I soak it in water for about a hour to add moisture in then prepare it in my favorite dishes
